Zero Waste Christmas Pt. 1 - Cinnamon Coffee Cake with Streusel Crumb Topping

Here's a sweet gift idea: cake in a reusable jar! These individually portioned (convenient and portable) desserts are a great gift for co-workers, and to take to family get-togethers over the holiday season. We absolutely love the fact that they're a gift with reusable packaging too.

These easy to make jar cakes are stunning, thoughtful, kind gifts, and of course once the delicious contents disappear, the jar still comes in handy - perfect for storing pantry staples, leftovers, taking salads to work... the possibilities are endless.

Sticking to our coffee theme, we felt that a lovely streusel topping on delicious coffee cake seemed perfect for festive season celebrations!  

Cinnamon Coffee Cake with Streusel Crumb Topping Recipe

For the cake:
• 2 tbsp sugar
• 2 tbsp vanilla yoghurt
• 1 egg white
• 2 1/2 tbsp flour
• 1/8 tsp baking powder
• 1/8 tsp salt
• 1/4 tsp vanilla
For the streusel:
• 2 tbsp butter, cut into cubes
• 2 tbsp brown sugar
• 1 tbsp flour
• 1/2 tsp cinnamon

Preheat oven to 180 degrees. Lightly coat the inside of a small, wide-mouth mason jar (around 250mL capacity) with nonstick spray. Whisk sugar, yoghurt, egg white and vanilla until smooth. Fold in the flour, baking powder and salt until combined. To make the streusel, work the cubed butter into the dry ingredients using your fingers until fine crumbs form. Pour half of the batter into the bottom of the jar and top with 1/3 of the streusel mixture. Now top with remaining batter and then the remaining streusel mixture. Place on a baking tray and bake for 20 minutes, or until a skewer inserted comes out clean. Note: the jar will be hot! Allow to cool before eating. Top with cream or ice cream before serving if desired.
